De mutagene en antimutagene eigenschappen van bioflavonoiden werden in de bacteriele mutageniteitstest van Ames met Salmonella typhimurium stammen TA98 en TA100 onderzocht. De volgorde van mutagene activiteit voor beide stammen in aanwezigheid van metabole activering was quercetine>myricetine-kaempferol>morin hydraat. De stoffen galangin, luteoline, apigenine en chrysin vertoonden geen mutagene werking voor Salmonella TA98 en/of TA100. De antimutagene werking van de bioflavonoiden werd bepaald tegen de mutagene werking van benzo(a)pyreen in Salmonella stammen TA98 en TA100. Alle hier onderzochte stoffen, inclusief de stof met het laagst aantal hydroxylgroepen en chrysin vertoonden een antimutagene werking tegen de mutageniteit van benzo(a)pyreen.The mutagenic and antimutagenic properties of bioflavonoids were determined in the bacterial mutagenicity test of Ames, using Salmonella typhimurium strains TA98 and TA100. The decreasing order of mutagenic activity found in both strains was quercetin>myricetin-kaempferol>morin hydrate. The compounds galangin, luteolin, apigenin, and chrysin were devoid of mutagenic activity under the present conditions. The antimutagenic activity of the bioflavonoids was measured against the mutagenic activity of benzo(a)pyrene (BaP) in Salmonella strains TA98 and TA100. All compounds investigated, including the compound with the lowest number of hydrozyl side groups and chrysin, did show antimutagenic activity against BaP-induced mutagenesis.
