dc.description.abstractHet zoutgehalte in brood is sinds 2011 met 21 procent gedaald. In kaas is het zoutgehalte met circa 11 procent ook afgenomen ten opzichte van 2011. Het zoutgehalte verschilt echter aanzienlijk per soort kaas. In vleeswaren bedoeld als broodbeleg is het zoutgehalte in 2014 vergelijkbaar met dat van 2011 en 2013. De vleeswarensector heeft volgens afspraak tot in 2015 de tijd het gehalte aan zout en aan verzadigd vet te verlagen. Bewerkte groente en peulvruchten, zoals doperwten of bonen in blik of glas, hebben ook een lager zoutgehalte. Aangezien brood een grote bijdrage levert aan de inname van zout, draagt de daling van het zoutgehalte in deze productcategorie er in belangrijke mate aan bij dat mensen dagelijks minder zout binnenkrijgen. Voor verzadigd vet en suiker verschillen de productsamenstellingen niet. Dit blijkt uit onderzoek van het RIVM. Hierin wordt per productgroep gevolgd wat de gehalten aan zout, suiker en verzadigd vet zijn en hoe deze zich door de jaren heen ontwikkelen. Aanleiding hiervoor is het 'Akkoord Verbetering Productsamenstelling', dat de minister van Volksgezondheid en de brancheorganisaties van de voedingsmiddelenindustrie, retail, horeca en catering begin 2014 getekend hebben. Hierin is afgesproken de gehalten aan zout, (verzadigd) vet en energie (suiker, vet) in voedingsmiddelen stapsgewijs te verlagen. Dit akkoord loopt tot 2020. Voor dit onderzoek worden diverse gegevens gebruikt over de samenstelling van producten: gegevens die fabrikanten en de desbetreffende sectoren aanleverden, en onafhankelijke analyses door de Nederlandse Voedsel en Waren Autoriteit (zout en verzadigd vet). Deze gegevens zijn gecombineerd en vervolgens vergeleken met gegevens uit de publicaties van het Nederlands Voedingsstoffenbestand (NEVO 2011 en 2013). In 2012 is de verandering van de productsamenstelling van voedingsmiddelen voor het eerst op deze manier in kaart gebracht. De 'Herformuleringsmonitor' was toen toegespitst op zout (natrium) en verzadigd vet. Sinds 2014 is dit uitgebreid met suiker (mono- en disachariden). De herformuleringsmonitor wordt uitgevoerd in opdracht van het ministerie van VWS.

In addition, the salt content of cheese reduced with circa 11 percent, although the difference was not statistically significant. In meat cold cuts, the salt content is comparable in the 2014 compared with 2011 data. The pledge for salt reduction in meat cold cuts, however, is valid until June of 2015. The salt content of vegetables and pulses in glass and tins was significantly lower in 2014 compared with 2011. With current consumption patterns in the Netherlands, lower salt in bread probably leads to lower daily salt intake, as bread is a major contributor. For saturated fat and sugar, we observed or, no major differences between food compositions in 2014 compared with 2011. These results are shown in this RIVM report on sodium, saturated fat and sugar content of foods ordered by the Dutch Ministry of Health, Welfare and Sport. In January 2014, the minister of Health and representatives of the food industry and the hospitality and catering sector signed an 'Agreement for Improvement of Food Composition', 'Akkoord Verbetering Productsamenstelling'. In this agreement, the parties agree to gradually lowering the contents of salt, (saturated) fat, and calories (from sugar and fat) in foods up to 2020. In our research, food composition data of several sources were collected until 1 July 2014. Manufacturers and food sectors supplied food composition data on a voluntary basis. The Netherlands Food and Consumer Product Safety Authority (NVWA) shared data on sodium and saturated fatty acid contents of foods from their independent monitoring system. The data provided are compared with sodium, saturated fat and mono-and disaccharide contents available from the Dutch Food Composition Database (NEVO) version 2011 and version 2013. We monitored the (changes in) food composition before in 2012 using this method. At that time, the 'Monitor Product Reformulation' 'Herformuleringsmonitor' was aimed at salt (sodium) and saturated fatty acid contents of foods. Now, we add sugar (mono-and disaccharides) contents of foods at the request of the Dutch Ministry of Health, Welfare and Sport (VWS).
