dc.description.abstractDe Schijf van Vijf is een hulpmiddel om gezond te eten. Uit onderzoek van het RIVM blijkt dat bijna driekwart van de voeding van Nederlanders bestaat uit 'basisvoedingsmiddelen' zoals die in de Schijf van Vijf zijn beschreven. Dit zijn bijvoorbeeld groente en fruit, aardappelen, brood, rijst en pasta, zuivel, vlees en vis, vetten en oliën, en water. Een kwart van de voeding bestaat uit producten die hier niet in zijn beschreven, zoals snacks en (niet-)alcoholische dranken. Dit is meer dan wordt aanbevolen. Verder kiezen Nederlanders binnen productgroepen veelal de minder gezonde producten, zoals witte rijst in plaats van zilvervliesrijst of harde margarine in plaats van olie. Dat is nog meer bij kinderen en bij personen met een laag sociaaleconomische status het geval. De Schijf van Vijf is gebaseerd op de Richtlijnen voedselkeuze van het Voedingscentrum. Een eetpatroon dat meer overeenkomt met deze richtlijnen, kan ervoor zorgen dat mensen onder andere meer onverzadigde vetzuren en voedingsvezels binnenkrijgen en minder suiker en zout. Een gezond voedingspatroon draagt bij aan het voorkomen van chronische ziekten en overgewicht. Binnen de productgroepen, zowel uit de Schijf van Vijf als daarbuiten, wordt een onderscheid gemaakt tussen de gezondere producten en de minder gezonde. De mate waarin mensen voor gezondere producten kiezen, verschilt per productgroep. Van de groep aardappelen, pasta en rijst is dat bijvoorbeeld 49 procent, van hartige snacks is dat slechts 3 procent. Kinderen consumeren meer zoete en hartige snacks, niet-alcoholische dranken (zoals vruchten- en frisdrank) en broodbeleg (zoals jam, hagelslag en pindakaas). Mensen met een hoge sociaaleconomische status kiezen vaker voor de gezondere producten. Zij eten meer groente, fruit en vis en drinken meer water, koffie en thee. Ook drinken zij meer alcoholische dranken. Dit onderzoek is uitgevoerd met gegevens uit de Nederlandse Voedselconsumptiepeiling van 2007-2010 en het Nederlands Voedingsstoffenbestand (NEVO 2011). De gegevens zijn onderdeel van het nationale voedingspeilingsysteem en dragen bij aan de ontwikkeling van beleid voor gezonde voeding en veilig voedsel, productinnovatie, voorlichting en voedingsonderzoek.

This research by the RIVM shows that almost three-quarters of the diet of the Dutch consists of 'basic foods', as described in the 'Schijf van Vijf'. These include fruit and vegetables, potatoes, bread, rice and pasta, dairy products, meat and fish, fats and oils, and water. A quarter of their diet consists of products that are not included here, such as sweet and savoury snacks and beverages other than water, tea or coffee. This is more than is recommended. Furthermore, even within the basic food groups, Dutch people often consume less healthy variants, such as white rice instead of brown rice or margarine instead of oil. This tendency is stronger in some population subgroups, like children and people with low socio-economic status. The 'Schijf van Vijf' is based on the Food-based Dietary Guidelines of the Dutch Nutrition Centre. A dietary pattern that is in agreement with these guidelines, could reduce the intake of saturated fatty acids, salt and sugar, and increase the intake of fibres. A healthy diet contributes to the prevention of obesity and chronic diseases. In the case of food products, a distinction can be made between 'healthy' and 'unhealthy' products. The proportion of healthy foods varies between food groups. For example, 49% of potatoes, rice and pasta but only 3% of salty snacks are considered healthy. Furthermore, children consume more sweet and savoury snacks, non-alcoholic beverages (such as fruit juices and soft drinks) and spreads (jams and peanut butter) than adults. People with high socioeconomic status often opt for healthier products. People with high socioeconomic status consume more vegetables, fruit, fish, water, coffee and tea. They also drink more alcoholic beverages. This study was conducted using information on the Dutch Food Composition Database (NEVO, 2011) and data from the Dutch Food Consumption Survey 2007-2010, which is part of the national diet monitoring system, and contributes to the development of policy on a healthy diet and food safety, as well as to product innovation, nutritional information and diet research.
