    Publiekssamenvatting
    The transmission of Salmonella through the poultry meat production chain from farm to consumer is described for exposure analysis. The chain is subdivided in four stages: production animals, animal processing, the retailer, and the consumer. Simple models of the first two stages show how modelling can be a helpful tool to 'a priori' evaluate effects of intervention measures. Prevalence data indicate a more than threefold increase between the entrance of the slaughterhouse and the exit of the retailer, suggesting more data (and more research) are needed in these stages. Finally, methods to start modelling the consumer stage are suggested.
    Dit rapport beschrijft de transmissie van Salmonella via de pluimveevleesproductieketen in het kader van blootstellingsmodellering. De keten is onderverdeeld in vier stadia: productiebedrijven, slachterij, winkel en consument. Eenvoudige modellen van de eerste twee stadia laten zien dat modelleren een nuttig instrument is om effecten van interventiemaatregelen van tevoren in te schatten. Volgens de huidige (schaarse) gegevens lijkt de prevalentie tussen de ingang van de slachterij en de uitgang van de winkel meer dan drie keer zo groot te worden. Meer gegevens en meer onderzoek naar deze stadia zijn daarom noodzakelijk. Er worden methoden voorgesteld om ook de consumentfase te modelleren.
