The fish samples contained 0, 45 or 90 mg histamine which had been metabolized by photobacteria in fish out of histidine, or 90 mg histamine added to fresh fish. The volunteers had the samples for breakfast in random order, with intervals of one week. Attention was paid to clinical symptoms.
